PROTECTED-ORIGIN DENOMINATION EXTRA VIRGIN OLIVE OIL FROM THE TREVISO HILLS
The extra virgin olive oil from the Treviso hills is produced in the Pedemontana Trevigiana area, that is to say in the area between the borders with the provinces of Vicenza to the west and Pordenone to the east. It is considered a sort of anomaly in that it originates from olives above the 45th parallel, which is considered the climatic limit for this crop.
The olive groves yield high quality production due both to the pedological and climatic characteristics of the area, and to the presence of autochthonous varieties whose germ plasm has been recovered. In the production regulation, together with the Padanina variety, a Treviso autochthonous variety, cultivars with small and lengthened drupes are authorized, such as Frantoio (self-fertile and pollinating) and Leccino (self-sterile), Maurino (self-fertile and pollinating) and Casaliva (self-fertile and pollinating).
The extra virgin olive oil of the Treviso hills preserves the vitamins, the taste and the aroma of the olives, which, used raw, it transmits to foodstuffs. It is especially suitable for seasoning salads, making sauces or vinaigrette, or on toasted bread, or as seasoning of foodstuffs already prepared. It accompanies and enhances meats, fishes and vegetables, cooked or grilled. It responds very well to high frying temperatures (180°C) because of the stability transmitted by the mono-unsaturated fatty acids and by the antioxidants that it contains. It must be consumed within 18 months of harvesting and in the meantime it must be stored in the dark, in glass bottles, in a cool, dry place with a temperature below 18°C.
